Your Only Go-To Breakfast Cookie!

everything cookieThis cookie has been tried and tested on kids, adults, and diabetics and has passed with flying colors! It’s ridiculously easy, and you can play around with the mixture all you want without messing it up.

I got you on the edge of your seat now haven’t I? I had no doubt. So let’s get to the recipe!

You will need:

  • ¾ cup whole wheat or spelt flour
  • 1 cup organic oats
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • 1 egg (1 large ripe banana will work as well but the cookies will go bad after 2-3 days max)
  • ¼ cup coconut palm sugar (omit for a more diabetic friendly recipe, keep  if you are making these for kids who will enjoy the sweeter taste)
  • ¼ cup coconut oil
  • ¼ cup walnuts, chopped
  • ¼ cup semi sweet chocolate chips
  • ¾ cup dried cranberries (dipped in hot water for 1 minute prior)

 

How to:

  1. Mix first 5 ingredients first in one bowl
  2. In another bowl, whisk egg and sugar together till slightly fluffy
  3. Add oil, and mix again
  4. Then add nuts, chips and cranberries (last) and mix well
  5. Scoop into 24 pieces onto a baking tray and bake for 15 minutes

 

These will store well for up to a week in the fridge and will taste even better chilled. I found them to be a little crumbly when warm. You can easily substitute almonds for walnuts, or raisins for the cranberries – you might even want to make these with chocolate chips alone! THE WORLD IS YOUR COOKIE! Enjoy 🙂
