Yesterday’s post talked about trying out new appetizers as sustitutes for some of our fried fat-laden options. This recipe is simple, delicious, and can be a fun activity for parents and kids to do together. The winner though, is that dipping sauce. You will want to use the sauce for anything and everything around – TRY IT and tell me I’m wrong.
You will need:
- vegetables of choice, I recommend cucumbers, peppers and carrots (2 of each, all julienned)
- 1 avocado
- iceberg lettuce
- 1/4 cup chopped coriander
- rice paper
- deep dish with warm water
for the sauce
- 3 tbsp peanut butter
- 4 tbsps lemon
- 2 tbsp soya sauce
- 2 tbsp greek yoghurt
- tbsp garlic
- tbsp coriander
- 2 tsp sugar
- 1 tsp hot sauce
- tsp peri peri spices (optional)
- 1/4 cup water
How-to:
- Dip the rice paper in the warm water and flip once thoroughly
- Separate the lettuce and use as your “base” on the rice paper
- Fill the rice paper with a few vegetables and a slice of avocado plus tbsp coriander
- Roll, use water to “lick” rice paper sides together
For the sauce:
- Mix all the ingredients together using a food processor
- Chill for 30 minutes at least before serving
