Black Bean Burritos!


Let me start by saying that my fiance couldn’t even keep up with ONE week of being a vegetarian. He’s a carnivore to the core, and he – wait for it – CRAVES this dish. I call THAT my stamp of success!

Try it for yourself and let me know!

You will need:

  • 1 can black beans
  • 1 can red kidney beans
  • 2 tomatoes, chopped
  • 100g low fat cheddar cheese, grated
  • 3-4 scallions
  • shredded lettuce
  • 1/4 piece avocado, mashedlittle piece of avocado
  • 2-3 tablespoons lemon juice
  • spices: cumin, hot chili (optional), paprika, oregano (or just ready made burrito spices)
  • salt and pepper
  • 1 garlic
  • (optional) roasted peppers
  • (optional) light sour cream (I didn’t use any)

How to:

This dish is ridiculously easy because it involves virtually no cooking whatsoever. It’s just a matter of mashing the beans and just chopping/shredding the remaining ingredients and adding them.

1- Heat the beans in a pot, and mash when soft. Add spices (2 tsp cumin, 1 paprika, 1 hot chili, 1 oregano)

(I do recommend that whenever you’re using canned food, make sure to rinse thoroughly before using them or eating)

2- Make your avocado sauce, mash the avocado and add the lemons with some salt and pepper.

3- Heat your tortilla bread and add about a tablespoon of all ingredients, except avocado (2 teaspoons), and 2 teaspoons sour cream (I honestly didn’t even have any sour cream in mine!)

Calories and servings:

Servings: 8 burritos


Calories/serving = 310 calories!

I need to point out here that the average caloric content of beef burritos is AT LEAST 500 calories!

Add a nice green salad next to it and this would make an awesome dinner! Better yet, it’s the best option for when you’re having a big group over for game night.
