If you’re looking for an easy and quick lunch or appetizer, this is the easiest recipe there is! I’m generally not a big fan of eggs, but this is a meal too good to pass on.
You will need:
- 3-4 small potatoes
- 4 eggs
- 4 cloves garlic (sliced)
- 1 onion (chopped whichever way you want, I make them in rings)
- 2 tablespoons parsley
- 2 tablespoons canola oil
- salt and pepper
How to:
1- Saute the onion on the pay with the oil till they become soft and translucent, add the garlic and stir.
2- Slice the potatoes into rings and place them in a pot of boiling water for about 10 minutes or until slightly soft.
3- Add the parsley to the garlic-onion mix, stir for about 5 minutes before adding the potatoes.
4- Once the potatoes begin to turn brown, add the eggs. Do not stir. Wait till the eggs cook and turn off the heat, and serve! (It’s best to add salt and pepper to the eggs before adding the eggs onto the potatoes)
