Quinoa with a Twist!

As promised, an easy recipe for the super food we discussed (well, I babbled about it, you probably just read and maybe googled a little?)

you will need:DSC_0408

  • 1 cup quinoa
  • 1 1/2 cup homemade vegetable broth or water
  • 3 tablespoons fresh parsley, chopped
  • lettuce, chopped
  • 1 carrot
  • 1/2 can chickpeas
  • 1 tablespoon pine nuts
  • 1 tomato, diced
  • 1 onion, diced

How to:

1- In a medium pot, cover quinoa in water or vegetable broth and bring to a boil. Reduce heat to a slow simmer, cover, and allow to cook about 15 minutes, or until quinoa is cooked and most of the liquid has been absorbed.

2- On a separate small pan, lightly roast the pine nuts (no added oil!)

3- In a large bowl, combine all ingredients (without the quinoa at first). Then add cooked quinoa, olive oil,lemon juice and salt, tossing gently to combine well.

4- Chill for at least one hour before serving, preferably longer, to allow flavors to mingle.

Sauce:

Honestly, you can never go wrong with just pure lemon and olive oil. I like this salad with quite A LOT of lemon so I tend to go for about 1/2 cup lemon juice with a tablespoon olive oil and just a pinch of salt (but you might find this too zesty for you so maybe go down to 1/4 cup lemon)

another more exotic sauce option would be:

  • 1/4 teaspoons salt, divided
  • 1/2 cup chopped fresh basil
  • 3 tablespoons lemon juice
  • 2 teaspoons olive oil
  • 2 tablespoons dijon mustard
  • 1 garlic, minced

Servings and Calories:

Makes 5 big servings easily

Calories/serving (with just lemon and oil) = 231 calories
