If you’re anything like me then you need your dessert-fix for the day. This is one of the easiest desserts one can make, and you can easily enjoy a piece with your morning coffee, or after lunch.
you will need:
- 1 cup half white – half whole wheat flour (white flour works as well, I just tend to prefer whole wheat)
- 1/4 cup brown sugar(add a 1/4 cup Splenda or stevia if you want it sweet)
- 1 tsp baking powder
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1/4 tsp salt
- 2 eggs
- 2 Tbsp vegetable oil
- 3-4 Tbsp low-fat yoghurt (I personally used 3 only)
- OPTIONAL: 1 apple pureed for apple cinnamon doughnuts (highly highly recommended)
1- Mix dry ingredients together (flour, brown sugar, baking powder, nutmeg, cinnamon etc…)
2- In another bowl mix eggs, oil, and yoghurt. Whisk together till they get slightly foamy.
3- Pour the egg mix onto the flour mix and continue whisking till there are no more flour streaks left. (A friend of mine commented that it’s easier to add the flour mix to the wet mixture, that way it mixes easier and avoids lumps – so I’m gonna try that next time!)
5- Honestly I ended up “grilling” them but for those without a grill, just put the tray in the oven for 5-7 minutes. (if you’re going to use the oven then make sure not to top off the tray like I’ve done in the picture and instead just allow the mini doughnuts to rise)
P.S: The doughnuts are best the day of, but they’re ok the next day as well – just not as awesome

Makes about 18-20 doughnuts
Calories/doughnut = ~55calories
