you will need:
- 4 onions, diced
- 250g pasta (the one in the picture is gnocchi pasta, though generally I prefer whole wheat pasta)
- 1 1/2 tbsp olive oil
- 1-2 tbsp balsamic vinegar
- 1 tbsp brown sugar
- 3-4 cups chopped tomato (without peel) (I’m not a big fan of anything canned due to the added preservatives and salt)
- 1/4 cup whole black olives (you will have to remove the seeds before adding them to the pasta, but this is just for measurement purposes)
- salt and pepper to taste
1- Mix the 1 tbsp olive oil and the brown sugar together and then add the onions so that they are all covered in the olive-sugar mix
2- Start by lightly sautéing the onions in a sauce pan till it gets translucent
3- After about 5-7 minutes of sautéing, lower the heat and add the balsamic (be careful because vinegar is highly volatile and can burn easily so make sure the heat is very low or remove the pan temporarily). Give this another few minutes till the onions completely absorb the vinegar
4- Add the tomato paste mixture and keep stirring till you get a jam-like consistency
5- Add the salt and pepper and turn off heat
6- In another pot, cook the pasta as indicated on the package with water and 1/2tbsp olive oil. once that is done, pour the pasta onto a plate and add the tomato-onion mix.
6- Top the pasta with pitted black olives and enjoy!
